Abalone Fried Rice with XO Sauce
Ingredients:
4 abalone, defrosted and thinly sliced
3 cups long grain rice, pre-soaked
1 cup dried scallops, shredded
1/2 cup Char Siu pork
1/2 cup Chinese sausage, sliced
1/2 cup prawns, chopped
2 spring onions, chopped
1 egg, whipped
2 shallots, chopped
3 garlic cloves, chopped
3 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp XO sauce
Sunflower oil
Method:
This recipe is very quick to cook so make sure you have all of your ingredients pre-prepared.
1. Heat the sunflower oil in a large wok and add the shallots and garlic. Remove the shallots and garlic using a slotted spoon and set aside.
2. Add the whipped egg to the wok, and shortly after, fold in the rice.
3. Add in the sausage, shredded dried scallops and Char Siu pork. Add the prawn meat next, being careful not to overcook it. Return the garlic and shallots to the wok.
4. Next, add the oyster sauce, soy sauce and XO sauce to the wok.
5. Finally add the sliced abalone and mix through so it gently heats through.
6. To finish, stir through the chopped spring onions and serve while hot.
